Vegan Bday Cake Baked Oatmeal Recipe

If you are on the vegan side of Instagram, your explore page is probably FILLED with reels of baked oatmeal. I got so addicted to watching the videos of baked oatmeal, that I literally ordered ramekins off of Amazon just to hop on the trend! 

Baked oatmeal is so yummy because you can customize it AND it literally tastes like cake for breakfast. I found a recipe for birthday cake baked oatmeal on Instagram that I’ve been using (I’ll add it below! Go follow her account for more recipes @speedy.eatz) and it’s so good!!! They have all different kinds of baked oatmeal recipes on Instagram like cheesecake, tiramisu, carrot cake, etc. I made some tweaks to the recipe I found, like adding chocolate chunks (so it gets all melty and gooey after it’s baked), as well as adding vanilla soy creamer and almond butter to the actual batter. I didn’t have almond extract but I imagine that would take these oats to the next level.

Vegan Cake Batter Oatmeal Recipe

Since I’m stuck in my apartment quarantining, I’ve been experimenting a lot in the kitchen. I had just recently bought some vegan sprinkles and decided I wanted to make some sort of “birthday cake” overnight oats. I don’t love overnight oats. In fact, I hate them. But I wanted to give them a second chance. THEN. I came across The Big Mans World website where I found a recipe for “healthy vanilla cake batter oatmeal” and I was so excited because it was actual oatmeal and not overnight oats. However, you still keep them in the fridge, instead of eating them warm, so it’s similar to overnight oats in that way.

Well, for those of you out there in the universe who are fans of chia pudding (or Chia Pets, no judgment), I found a super simple recipe for you all to follow. All you need are the following ingredients: chia seeds (duh), non-dairy milk, vanilla extract, and sweetener of choice (preferably maple syrup). Once you combine all the ingredients, you have to mix/shake the jar every 5-10 minutes or so a few times so the chia seeds evenly distribute.

Pumpkin Pie Oatmeal Recipe

I love fall. So does everybody else. Does anybody know why that is? Like why does everybody love fall? IT JUST GIVES ME SO MANY FEELS!!!

So naturally, with fall  beginning and winter drawing near (#winteriscoming), we start to eat more warming, heartier foods. I guess this is our cave man (um that’s a sexist term… what about cave women? THEY EXISTED TOO) instinct. I guess when we all ate rocks and shit back in the day, to stay warm, we also needed to eat warm food. Now we just drink PSLs and call it a day!

Here is my recipe for pumpkin pie oatmeal that is perfect for fall and chilly weather!

Dragonfruit Smoothie Recipe

HEY GUYS! Am I the only one who thinks of Khalessi, Mother of Dragons, when I think of dragonfruit? No? Am I just a huge Game of Thrones nerd? Well, guess what? All the cool people are!!

Anyway, I’ve recently gotten into dragonfruit (also known as pitaya) smoothie bowls (mostly because they are pink lol but also delicious). Here is a recipe for one that makes a single serving, but feel free to add whatever you like! 

Ingredients:

  • 1 1/4 cups almond milk (or any nut milk)
  • 1 packet of frozen dragonfruit
  • 1/2 cup frozen chopped mango
  • 1/3 cup frozen cherries
  • 1 tsp chia seeds

Buttttt some people are trying to lower their carb/sugar/fat intake for whatever reason. And I get it, we can’t all eat like we’re in middle school, chomping away on chocolate bars and doritos whenever we want.

Birthday Breakfast Idea

Hey guys! I know this isn’t a “Recipe” per se, but it is a breakfast idea! 

It was my Grandpa’s birthday recently and Olie and I wanted to surprise him with something special that morning before we had to catch an early flight to LA. We asked our Grandma what we should make him and she suggested pancakes!

We didn’t want to give him boring pancakes, so we decided to make them fancy and fit for a celebration!

We made very simple, vegan pancakes (with real flour and baking powder, etc. Not those bullshit banana-oat flour pancakes. No offense LOL) and we topped it with some blueberry sauce to make it look fancy. To make the blueberry sauce, just put some frozen blueberries in the microwave and heat them up. They have to be frozen though so the excess water can create a sauce.

Rainbow Bagel Recipe

What’s the perfect treat to bake on a rainy Cali day? RAINBOW BAGELS. (Or as my grandma calls them “Bagels with makeup” #LOVEHER) 

My vegan friend Amanda and I decided to YOLO it and attempt rainbow bagels and they actually came out amazing! Not gonna lie, the process is very tedious, but the result was yumma-licious and very Instagrammable #ThatBasicBitchLife  (I mean, they’re not NY bagels but…)

VEGAN BREAKFAST RECIPE (AVOCADO TOAST AND ACAI SMOOTHIE)

Banana Ice Cream Recipe

Freeze sliced bananas for a few hours, put in a food processor, blend till creamy, add original almond milk, vanilla extract, frozen strawberries and mangos, and then take out and put back in freezer to freeze a little longer. Take out of freezer and put unsweetened coconut, coconut sugar, and passion fruit on top! YUM! 

HOMEMADE VEGAN CHOCOLATE CHIP WAFFLES RECIPE

My friend Catherine came over who i hadn’t see in four months (And we’ve been besties since we were six years old so that’s a long time) and we decided to be creative and make chocolate chip waffles!!! And they actually came out good!! SO yummy. Just make sure to spray the waffle maker well so the waffles don’t get stuck or burn, and add chocolate chips in the batter! When they’re done, use agave or maple syrup and sprinkle powdered sugar on top #Perfection. So yummy and so fun to make!! 

P.S. the waffles kept getting stuck to the top of the waffle maker lol so if that happens, don’t worry about ittttt.

VEGAN CINNAMON TOAST RECIPE

So, like the losers we are, Bella, our older sister Sophie, and I were watching the Pioneer Woman on Food Netowrk (Who I recently found out was also a fellow Trojan at USC. #FightOn!) and we love the show, however nothing she makes is vegan because she like lives on a farm or something idk.

Vegan Brunch

SOOOO today was actually Senior Skip Day and me, the sis, and our friends Taylor, and Cristina all celebrated the day with vegan brunch and a Lord of The Rings Marathon. For brunch we had avocado toast, hash browns, fruit salad, toast with vegan cream cheese and brown sugar, french toast with chocolate chips, and fruit salad. AND YES WE ATE EVERYTHING. Am i ashamed? IMPROVISING AT AN UN-VEGAN FRIEND’S HOUSE FOR BREAKFAST

Sometimes granola,  avocado toast, and fruit salad are not options, but don’t worry, once digging in your friend’s kitchen, you will be sure to find something. Toast and peanut butter is always a safe bet because almost everybody (unless they have a peanut allergy) has bread, peanut butter, and a toaster (Will toasters always look old-fashioned? even in the future? #foodforthought). My friend, luckily, had almond milk because her brother is lactose intolerant, so i also had the opportunity of having corn flakes or frosted flakes (i don’t remember) with almond milk. Not the healthiest of options, but hey, life isn’t always fair. My sister had a sliced banana and a side of original pretzel crisps. My friend is the one with the hot chocolate and the chocolate croissant (that diva). Then we chilled by the pool, happy that our vegan lifestyle didn’t cause anybody any stress that morning looking for something to eat.

Avocado Toast Recipe

It’s taking over the breakfast market! Well at least it should.

Avocado toast is a very delicious and nutritious breakfast options for all you vegans (and non-vegans). If you are trying to lose weight, i suggest only eating it twice a week (avocados are high in good fat though), but if you’re not, than go ahead and splurge (until you get sick of avocados, which i think might be near impossible).

It can be prepared a variety of ways, but i usually like to toast some Food For Life brown rice bread (found at Whole Foods in the frozen section and is yeast free, gluten free, wheat free, corn free, and soy free…sounds gross, but it is surprisingly, amazing). When the toast is done doin its thang (toasting i guess? Than wouldn’t it be when the bread is done doin it’s thang? #whatever #mindf**k), then i usually sprinkle some olive oil on it, top it with sliced or mashed up avocado, and sprinkle some salt and pepper...

Vegan Almond Croissant Recipe

Almond croissants are ELITE. Idc what you say. They are a top tier pastry. And if you don’t like them, GROW UP. Anytime I’m at a vegan pastry shop and they have almond croissants, I ALWAYS get them. So, I figured, why not attempt to make them. I used this recipe found HERE. It’s such a super simple and easy recipe. Way more simple than I thought. I accidentally bought almond paste thinking it was an ingredient in the recipe, but then I realized part of the recipe was MAKING the almond paste. Honestly, I just recommend buying it. It’s so much easier that way and it tastes likes straight up marzipan. Delicious.

Vegan Mini Matcha Crepe Cake Recipe

Okay if you’re hella trendy like me (jokes jokes), then you know of Lady M’s FAMOUS crepe cakes. They are SOOOO aesthetic and elegant. WELL, as most trendy things are…. they aren’t vegan. But that doesn’t mean we have to skip out on the party!!! I found a recipe online linked HERE for vegan matcha crepe cakes. The process takes a bit of time and patience but I’ve always wanted to eat a vegan crepe cake so I was COMMITTED. I didn’t make enough crepes so I decided to make mini ones by using a glass cup as a sort of cookie cutter. That way I could make 3 mini crepe cakes instead of 1 big one.

Vegan Olive Oil Cake Recipe

Okay, I know olive oil cakes have been around forever but I only recently heard about them all thanks to the Kardashians Instastories. Suffice to say, olive oil cakes are the BOMB. They are light, fluffy, not too sweet, and so delicious. Eating an olive oil cake is like a breath of fresh air. It’s hard to find vegan olive oil cake (although The Moody Vegan in LA sells them and so does Chaumont Vegan), but when you’re stuck in CT for winter break, you must resort to making your own! Peanut Butter Cookie Dough Pretzel Bites

If any of you know me, you know I LOVE baking. Something about it is so therapeutic to me. Well, I found this amazing recipe for peanut butter pretzel cookie dough bites on Serving Up Simplicity (click here for full recipe!) The recipe is incredibly simple and doesn’t require an oven (TBH  waiting for an oven to preheat makes me SO restless).

Vegan Twix Bar Recipe

This recipe is DEFF in my top 5 favorite recipes to make and eat!!! It’s AMAZING. I’ve literally made it three times in one month. That’s how much I love it. I found this recipe on Rachael’s Good Eats website and it’s the easiest vegan Twix bar recipe I’ve ever seen and doesn’t require you to make any date caramel or sugar caramel (both require so much effort. NO thanks lmao).

All you need is like 10 ingredients. Ok I don’t know if it’s ten on the dot, BUT it’s basically like almond flour, maple syrup, vanilla, almond butter, salt, coconut oil, and like almond milk. Easy Vegan Banana Bread Recipe

Hey, y’all, who else is scared shitless because of this corona madness? Well, same. However, there is no need to fret!! As long as you stay indoors, wash your hands, and keep supporting your immune system, you should be ok. I say should and not will, because, well, shit is getting crazy out there and who knows what’ll happen in the next few weeks. 

Corona-talk aside, for those of you looking to mentally escape the madness, one thing I totes recommend you do is bake. Baking always soothes me and keeps my mind busy (mainly because I’m terrible at it and spend most of my mental energy not trying to burn the kitchen down).

Well, I’ll say more anyway. I was looking to use up some of my pantry items (which I got on Thrive Market #spons #ad #kiddinglol) and found this AMAZINGLY easy cookie dough recipe from Gal Cohen’s Instagram, @holyhealth! She has an amazing account and you should definitely look her up/follow her. 

Also, I just realized we share the same last name. Wow, Gal, are you my long lost sister? Cousin. Niece. Mom!??!

Anyway, the only ingredients you need to make these puppies are almond flour, cashew butter, maple syrup, chocolate chips, a pinch of sea salt, and vanilla extract.

Cherry Garcia Nice Cream Recipe

I lowkey just found Cherry Garcia isn’t a real flavor. Like it is, but it’s not. It’s a flavor made up by Ben & Jerry’s. How confusing is that? I legit thought it was a traditional ice cream flavor. Another thing I found out: it was named after Jerry Garcia. That makes so much sense now. I always wondered why it was called Cherry GARCIA. Garcia is not a flavor lol. 

Anyway, I decided to veganize it (although I’m pretty sure B & J’s already has a vegan Cherry Garcia by now) and make it healthy! It’s actually really simple to make!

Vegan Pecan Pie Recipe

I made my own vegan pecan pie!!! I feel like an adult now! First pecan pie, next, my own house and kids! (Jk, no kids. Just dogs. Lots of dogs).

It’s a super, super easy pie recipe. Nothing too intricate or fancy. No special ingrediants. 

My review: Pie tasted great!! My only issue was that the middle was soft/ a bit mushy so maybe, depending on your oven, keep it in for a bit longer? 

Also, I used a premade vegan graham cracker crust from Whole Foods which was amazing, so if you can’t find the pie crust that the recipe recommends, you can also use that! Vegan Smores Cup Recipe

So guys, what do you do when you’re bored, have a friend over, and have all the ingredients to assemble smores? You get creative and you make smores CUPS!

Raw Vegan Oreo Recipe

OREOS OREOS OREOS OREOS. I know. They’re amazing. They are a combo of my two fave things in life: cookies and chocolate (Oh and cream? lol forgot about that part).

Raw Cinnamon Bun Recipe

I don’t know what’s gotten into me lately. Vegan Christmas Cookie Recipe

So guys, I may not be the best chef but I am quite the baker, I do have to say.

At the resort we were staying at in the Caribbean, Bella, my younger sis, and I decided to go to the kitchen and bake Christmas cookies with the chef! (For Santa of course ’cause Santa totally exists…duh….SPOILER ALERT: he doesn’t #oops) 

Anyway, we made a frosted sugar cookie, a gingerbread cookie, and chocolate chip cookie.  

The chef didn’t really use real recipes ’cause he’s cool like that I guess, but here was his ingrediant list/version of the recipe.

Anyway, we def made like a huge mess in the kitchen and bothered all the chefs hehehehe but it was all smiles, and fun, and powdered sugar.

He even put them on the dinner menu and they were AMAZING (if I do say so myself *smirk face*).

Vegan Fondue Recipe

So, what do you do when you’re at a friends house late at night and it’s a holiday so you have an excuse to eat whateva the fux you want? 

You take an impromptu trip to Whole Foods and buy a shit ton of snacks and chocolate chips to make vegan fondue!! (* Also side note, the hottest guy bags the groceries at this WF so if delicious food isn’t enough incentive to go to Whole Foods, this sexy dude sure is)

We bought: 

  1. Enjoy Life chocolate chips (Seriously, if you want to enjoy your life, get them.)

  3. Vegan marshmellows

Vegan Pumpkin Pie Recipe

ITS FALL. Which means chai lattes, sweater weather, beanies, combat boots, and most importantly PUMPKIN PIE. Yes you heard that right (or read that right?)….PUMPKIN PIE.

Our friend Bliss (who we hadn’t seen since we were 3 when we went to preschool together) goes to USC now and is an environmental vegan (she is vegan for the environment #duh). EASY VEGAN BANANA BREAD RECIPE

So, as you college kids know, any vegetables/fruit you get and don’t use in a week go bad, so you gotta use ’em while they’re hot! We bought two bundles of bananas planning to be healthy and shit and make banana ice cream for brecky but instead they got too ripe and we opted for the dessert path instead #lolz

We decided to make vegan chocolate-chip banana bread. With limited ingrediants in our college apartment, all of the recipes asked for way too many obscure indrediants we didn’t have except for this recipe right here.

VEGAN PUMPKIN CHOCOLATE CHIP COOKIE RECIPE

Sorry no measurements because i’m cool like that, but here are the ingredients I mixed together to make these pumpkin chocolate chip cookies (low cal/natural/healthy).

  • Brown rice flour
  • Pumpkin Puree
  • Apple Sauce
  • Baking powder
  • Cinnamon
  • Almond milk 
  • Apple honey 
  • Stevia sweetened carob chips
  • Vanilla extract

I legit just mixed it all together and baked it for 15-20 mins at 350 degrees. Vegan Ice Cream Sundae Recipe

OKay, so yes. Although we went out to lunch, snacked all day, then had a huge picnic for the fireworks, I was still down for some vegan sundaes. My stomach is like a black hole. It just keeps consuming and I don’t know where all this food is going! #mindblown JK, it’s going straight to my thighs. 

So Sol, the vegan masterchef, whipped up some delicious chocolate (coconut based) ice cream sundaes for our Orange is the New Black marathon. She cut up strawberries and sprinkled the ice cream with leftover vegan cookie crumbles and cappuccino sprinkles which are actually BOMB, and topped with chocolate chunks.

I literally snuggled up on the couch with a blanket and a sundae and was like, yeah this is the shit. This is the stuff that dreams are made of.

So whenever my friend Allie comes over we always make monkey bread because its the perfect movie snack. It’s tasty and you can eat it in little bites. I love little bites! BTW: it isn’t bread, its more of a cinnamon bun type thing, and it has nothing to do with monkeys (geez this is a vegan blog!)

Vegan Cake in a Jar Recipe

Hey guys, i follow this cool food instagram called NewForkCity (it’s not vegan, i know I’m such a traitor, but the food they post looks so good). They posted a photo of cake in a jar, so i decided to invite my friends Allie and Cristina over (they’re both vegetarians woo!) and we decided to make homemade vegan cake in a jar and watch Frozen! Anyways, we just looked up a recipe for vegan chocolate cake and frosting and put it in a jar with frosting. My friend put sprinkles on hers (idk if they’re vegan so i would double check). Also, i put too much frosting in my jar so my cake kinda got soggy so make sure you ration out the cake and the frosting well, alright my-future-cake-in-a-jar masters?!

Hey everybody, did you know that upon turning vegan, you go through a baking phase? Sounds weird, but it’s true. My sister and I went through an obsessive baking phase in 10th grade where all we did was bake vegan stuff at like  2 in the morning and watch Lord of The Rings…i know, we’re so cool. Vegan Chicken Katsu Recipe

Chicken katsu is so underrated but delicious? Like nobody talks about it but it’s fire??? Anyway, finding vegan chicken katsu is NEAR impossible, so I decided that I would just make it myself BECAUSE YOU HAVE TO WORK FOR YOUR DREAMS NOT JUST WISH FOR THEM #inspiration. Vegan Bang Bang Tofu Recipe Review

OK. Idk if you’ve ever had bang bang sauce at a restaurant before but it is NEXT level. It’s creamy, slightly spicy, and a little tangy. The perfect sauce for an Asian dish. I saw a recipe for bang bang tofu and I immediately wanted to make it because it reminded me of a creamy rock shrimp dish I used to eat at Nobu before I went vegan. I found this amazing Bang Bang Tofu recipe from a blog called This Savory Vegan. You can find the recipe HERE. I also made a side of jasmine rice which I cooked with a little salt and butter (soOoooooOooooo fricken bomb), and then I topped the dish with green onions.

My friend Ali is obsessed with cacio e pepe. And when I say obsessed, I mean OBSESSED. Like it might be one of the only things she’s enthusiastic about. And if you know her, she’s extremely chill and mellow most of the time. So when she’s enthusiastic, it stands out.

Super Simple BBQ Tofu Recipe

Late night. Come home. Quarantine sucks. I know. 

Did anyone get that Blink 182 reference or am I just a cringy 90’s kid? Regardless, quarantine does suck for a lot of us and one of the reasons why it sucks is because grocery stores are literally running low on our favorite foods. Especially because vegan products are generally in lower stock, it’s been hard to get our hands on some of the essentials. 

Well, my vegan bunnies, have no fear because I found the easiest BBQ tofu recipe of all time from the amazing vegan YouTuber (vegan Thor perhaps??) Brian Turner. The link to the YouTube video recipe will be linked below.

Sushi IN ANY FORM is amazing. Sushi roll, sushi burrito, sushi sandwich. JUST GIVE ME SUSHI!!!! Vegan sushi of course. I mean let’s be real, the two best foods are sushi and sandwiches, so to combine them is like *explosion sound* mindblowing.

Like whatever you are picturing it tasting like, picture that, but with the addition of it having been sprinkled with fairy dust and kissed by angels. PURE SUSHI HEAVEN. Easy Vegan Dinner Ideas (ala the Cooking club at USC)

So guys…apparently there’s a cooking club at USC (who knew??)! The other day, they decided to hold a vegan cooking class on campus because they are glorious angels sent from heaven and Bella and I went! Can’t say no to free vegan food. Sorry, not how I was raised…

Simple Vegan Salad Recipe

Um, I know I sound like one of those annoying girls but sometimes you’re just really craving salad. Good thing I’m friends with Sara who happens to be from an all-vegetarian family (who’s also incredibly vegan-friendly) and a master at making delicious salads!!! 

Anyway, the twinsie and I were coming in late from NYC and hungry AF on our way to Sara’s for a sleepover… and by the time we got to her house, she had graciously set up an ENTIRE SALAD BAR FOR US!!! (My favorite type of bar!!! #lolz #not21yet ) ISN’T SHE THE BEST!?

So so so the little sis (little as in Leila) and I were bored at the house while Bella was getting a massage #diva so we decided to gather up all of the taco-like ingredients in our household and whip up vegan taco bowls. 

Here is our fabulous vegan recipe for taco bowls: 

  1. Rice made special by Chef Leila (We used white rice, but you can use brown. Doesn’t matter. It all tastes the same. We don’t discriminate here)

VEGAN SPRING ROLL RECIPE

Hey there fellas. So yesterday being such a rainy day, Olie thought it would be a great idea to bring some spring and sunshine into our lives by suggesting to make spring rolls (lol jk she was just craving them.) 

BTW they are super easy to make. Also BTW Trader Joes is ten gazillion times cheaper than Whole Foods so….I may be switching my allegiance (jk I can’t quit Whole Foods. But Trader Joes is a close runner up) At Trader Joes, we bought rice noodles, romaine lettuce, mangos, tofu, and carrots. They didn’t have rice paper so we had to go to handy dandy Whole Foods for that one.

All you have to do is boil water and cook rice noodles. Drain them and then run them under cold water. Set aside. Chop up carrots, mangos, lettuce, and tofu, and then set aside. Wet a piece rice paper under the faucet and then lie it on cutting board. Put toppings and noodles on rice paper and fold like...

CHEF LEO FOR PRESIDENT. Lol jk. He’s just a chef, but I promise you, his food is so delicious that it could probably run the world. To clarify, Leo is my mom’s friend who’s a chef and he is a BOSS at cooking vegan food. SO SO SO guys, I’m about to move into my apartment in the city to be an adult for the first time (#eeek!) so I decided the night before to be an ultimate child with the sis and our amazing friend Sara who set up the best sleepover ever! We  ate snacks, made homemade pizza, watched Captain America Winter Solider (aka drooled over Chris Evans, the hottie/human dorito), and then chatted about creative writing all night. Twas a dream friends.

Sooooo Leila and I were cravin some pizzzzzaaaa and we were crusin in Whole Foods (ya know, as we do) and we found some vegan pizza dough (hollllaaaa) and so we were like UM YEA.

We made the pizza dough and used vegan cheese and tomato sauce and it was maddddd gooood. Also, the dough was pretty quick and simple to make. Usually yeast has to rise for like 3 hours but this one was just 40 mins. Wahooo. Also, it came with yeast (HALLELUJAH). Like the day before i was on a no carb diet. No carbs? Vegan Thanksgiving Dinner Ideas

HAPPY TOFURKY DAY!!!!! Not that I really support the reason for this holiday (Like #no columus, you aint a boss) or the idea of slaughtering millions of turkeys solely because of a stupid tradition, there is a way to enjoy your meal and stay true to your vegan lifestyle!

So, for din din we had Tofurky (Which is basically fake turkey) and it comes with gravy and a chocolate brownie and it was sooooo yummy!! Then we had mashed sweet potato, corn & peas, green beans and mushrooms, vegan stuffing (Regular stuffing without meat) and vegan cornbread! It was so delicious!!! (Even though I def was preggo with like quadruple food babies afterwards) 

And for dessert we had 4 pies! A chocolate almond peanut butter pie, apple pie, pumpkin pie, and a raw strawberry chocolate pie. Both chocolate pies were homemade but the apple and pumpkin were bought at whole foods I think!

Anyway, yes, vegans can still enjoy turkey...

VEGAN PICNIC (FOURTH OF JULY EDITION)

Okay, so I wouldn’t really call myself the most patriotic American but I do enjoy a good burger and some fireworks on the fourth. I really wanted to make a cheesy joke and be like “May the fourth be with you” but it’s not May 4th so uh, that would be awkward. 

Anyway, it was Sol’s brilliant idea to make a vegan picnic and eat it on the golf course of Pepperdine University (Beautiful campus in Malibu right on the beach) and watch fireworks! So if you are ever in the LA area on the fourth, it’s def a place to check out. But it gets freezing as ballz, so bring a sweater or a blankie and cuddle with a stranger. The world is a vulnerable place. Embrace it.

So, I know all ‘yall vegans out in there in the ether are quite familiar with the popular breakfast food, avocado toast! For those of you who seem unaware of the delicious and nation wide craze (Over-exaggeration? Idk) , it is basically mashed avocado mixed with salt, pepper, and lemon on top of a toasted baguette with drizzled with olive oil and sometimes balsamic vinegar. 

It is supppperrr yummy and filling and good for you! (Okay, maybe not the bread part, but I mean, we could all use a few carbs every now and then, right??? #whoamikidding)

Vegan Cooking Class and Recipes

Because my extent of cooking knowledge reaches as far as toast, cereal, and maybe if I’m being brave, frying prepackaged veggie burgers….mi madre thought it was a good idea to get me and the twinsy a cooking lesson so we invited our friend Rebecca and my adorable Grandma and ventured off to a cooking class. The chef Laurie was so awesome and patient and kind and made sure none of us cut our fingers off during the chopping portion of the class! Spending Thanksgiving with our aunt in Texas was easy peasy. We just put the Tofurkey in the oven with a baste, gravy (Came in package), and some veggies like carrots and sweet potato (We had at home) and it came out AMAZING!!! The box even came with its own Amy’s vegan chocolate cake for dessert!

How trendy am I? I’m doing Tik Tok challenges like every middle schooler in America! Jokes aside, yes, it’s true. My twin and I have been grinding on that Tik Tok trend and just got a Tik Tok @cohen_twins (shameless plug). Give us a follow! 

Anyway, if you are on Tik Tok, you have definitely heard of dalgona coffee or more popularly known as whipped coffee. If you haven’t heard of it, it’s basically a trend where people are electrically or hand-whipping their coffee to create this thick coffee mouse that you can put over milk to drink. 

To most people’s surprise, it’s actually quite simple to make and completely vegan. You only need three ingredients: instant coffee, boiling water, and sugar.

  • Two tbsp of maple syrup

  • 1/2 tsp of pumpkin pie spice

Homemade Almond Milk Recipe

Hey guys!  I made my own almond milk ! I know i sound like one of those people, but my family friend Justine told me how she made almond milk and so i thought, why not!? And it actually (surprisingly) came out tasting quite delish! (the spell check on this blog keeps making the word “delish” turn into “relish” #no )

That’s not to say i will make ‘milking almonds’ a habit of mine, but it was nice to try it out. And hey, maybe one day you’ll be in a really hipster conversation with fellow vegan Jared Leto and he’ll bring up homeade almond milk, and you’ll be all cool and be like “yeah done it. So imma give y’all a lil lesson on Japanese veganism, cool? Cool. 

So in Japan, veganism isn’t really a thing. They have a few vegan restaurants and the word “vegan” is understood, but they don’t view veganism as an actual “diet”  in the terms of “animal rights.” Japanese people view it in two ways. Vegan Sushi Recipe

Guys, I CROSSED SOMETHING OFF OF MY BUCKET LIST TODAY. Ok I don’t actually have a bucket list (and let’s be real, if I did, “making out with Chris Hemsworth” would be the only thing on it) BUT I finally did something I’ve been wanting to do for a long time which is….drum roll please…. MAKE SUSHI!

I saw the vegan homemade sushi all over Instagram and never had time to make it but today I finally did!!! It was so much easier than I thought it would be and was SO SO SO yummy. My sister and I devoured it all. Deff recommend!! Also it’s fun to come up with all the combos. As James Franco in This Is The End would say, making sushi is art.

Easy and Quick Vegan Taco Recipe

So ladies and gents, what do you do when your life is falling to shits? You stuff yourself with delicious food and call it day!

So that’s precisely what I did today. After a boring ass geology class (no matter how many scientists tell you rocks are cool, they aren’t) our friend Sara was nice enough to invite us over to her apartment and make lunch! 

Just so you know, Sara is a master grocery shopper (and chef and friend and person. Basically she’s a master jedi) and was the brains behind this “easy and quick vegan taco recipe”.

Vegan Picnic Ideas

So yes, when you get tired of always going out to eat with friends, sometimes you just wanna eat in and sometimes you wanna do it on the floor with a bunch of friends with a bunch of high carb foods. Sometimes ya just wanna picnic indoors, ya feel? 

So our friends are all going to college soon *crying emoji* and we thought it would be cute to just hang at one of our houses and be spontaneous with a picnic. It seems cheesy but it’s really fun! Just set up a blanket, play somes tunes, and chillax! Vegan BLT recipe

Ok. Yes. You are right. This would be my second dinner of the day…..butttt, before I start, I would like to share some personal medical facts with you (That’s legal, right?). I had my annual doctor checkup this morning and my doctor said I had a tremendously healthy heart rate/blood pressure (He was like “Do you work out a lot?” and I was like #yes) and he said I was at the healthiest weight I’ve ever been so HA! As a vegan, you spend a lot of your time fantasizing about what delicious non-vegan foods you see on Instagram would taste like if they were vegan. Puppy Chow was one of them. I had never eaten vegan puppy chow (or non-vegan puppy chow before I became vegan, for that matter) but I had heard such amazing things about it and every time I saw a photo of it, I wanted to drool. Vegan Korean Corndog Recipe Review

GUYS. If you know anything about trendy foods or are a mukbang/ASMR fiend like I am, then you KNOW the hype surrounding Korean corndogs. Ok, if you’re a veteran of this blog (hi my friend Je’lyn’s mom!!), you know that my sister and I rarely post our own recipes. 

Instead, we basically post recipes that we have found online and show whether or not they work/are worth attempting.

Vegan Mac and Cheese Cup Recipe

So what do you get when you put mac and cheese into cupcake tins and bake them…that’s right ladies and gents, you get vegan mac and cheese cups!!!

I recently met a vegan at my school named Jenny and thought it would be a fun idea to invite her over and get creative in the kitchen! So tonight Olie and Ali had the brilliant idea of using their sliced apples to make warm cinnamon apples. They were nifty enough to devise a plan too. They put their pre sliced apples into a microwavable bowl and sprinkled cinnamon and stevia on top. They put it in the microwave and then voilá! VEGGIE BURGER SLIDERS RECIPE

So our friend Rebecca came over and we’re all foodies/creative so we decided to be inventive with our night snack. We were all craving something salty/savory so Olie came up with the idea of making mini veggie burgers! We had a gazillion Hilary’s veggie burgers so we made one of those, toasted some brown rice bead, and used a tiny cup as a cookie-cutter and made vegan burgers! Vegan Nachos recipe

So last night, my friends Cristina and Taylor (yes i have friends. Are they imaginary? Hmm, you can be the judge of that) came over to watch the last Lord of The Rings to complete our LOTR marathon and, we all know, movie snacks are a MUST. 

So we scavenged in our pantries and fridge and found daiya cheese. BINGO. So we decided to make vegan nachos. We put tortilla chips on a pan and then put daiya cheese, barbecue sauce, beans, and chickpeas on top and then threw it in a toaster oven and it was AMAZING. So, yummy. Not very healthy, but like, so what who cares. Okay i care. But like, once and a while, it’s nice to splurge (more like every day #truth)

Quick healthy vegan snacks

Here are two vegan snack ideas.

1. Skinny Pop popcorn and and hot chocolate (almond) milk. Look at me, I’m so scholarly with my American classics. Low cal and a healthy substitute for real, buttery gross popcorn and sugary, corn syrupy hot chocolate.

 

2. Guacamole and pretzels. Thanks to my grandma, i discovered this delicious snack combo. My favorite thing about going to my grandma’s house is that she likes when i eat a lot! Why can’t the world be like that!?!?

Vegan Snack Idea- Apple Sauce Bites Recipe

Hey guys! If you are ever craving something apple-cinnamony/ a cold healthy treat that you can just grab and eat whenever you get that cravin, try making apple sauce bites! Put little blobs (blob is a gross word. I regret using it) of applesauce on a pan with parchment paper and freeze! Easy! Keep in the freezer and they can last a while (till the end of time…. Jk i would probably only keep them up to a week max just in case) k byeee enjoyyy

Healthy vegan snack recipes

Hey everybody! Here are some healthy snack ideas you can try when you’re cravin the D. And by D i meant doughnut….gosh what did you think i meant?

Anywho, if you have a juicer, try making an orange, apple, carrot juice! It is so delicious and refreshing. Just make sure that when you drink it, you wipe your mouth after. Because you may end up with an orange ‘stache and look like an Oompa Loompa (although let’s face it. Im 4’11…i already look like an oomph loompa)

And if you wanna something to munch on, try my Aunt’s cannelloni bean dip (recipe under photo). She used a hummus recipe on the back of a jar of tahini (I actually didn’t know that people used the recipes on the backs of products, i thought they were there for fun) and replaced the chickpeas for cannelloni beans. HOMEMADE KALE CHIPS

So I think every vegan has to have this experience at least once in their lives. I mean, kale is like the hottest leafy green on market right now, it’s super easy to make, and is a much healthier alternative to other snacks such as potato chips, ice cream, nutella crepes, etc.. . Cause we all know that person with the crepe maker…(I actually don’t. Do you?)

Vegan Chocolate Chip Banana Muffin Recipe
