Healthy Vegan Pancake Recipe

PANCAKES. YES. ALWAYS A GOOD IDEA. 

Buttttt some people are trying to lower their carb/sugar/fat intake for whatever reason. And I get it, we can’t all eat like we’re in middle school, chomping away on chocolate bars and doritos whenever we want.

Damn, I miss those days. 

SO. I decided to make some healthy chocolate chip pancakes! I used this recipe (but adapted it)

3-Ingredient Vegan GF Pancakes

In my pancakes I added

  • Dash of vanilla extract
  • Dash of maple syrup
  • Dash of cinnamon
  • Enjoy Life chocolate chips

And to make it even more chocolate-y, I made a chocolate sauce to drizzle on top. I used:

  • Four Sigmatic’s hot chocolate powder
  • Almond milk
  • Dash of vanilla
  • Dash of maple syrup

And then I topped my pancakes with more chocolate chips. And I know these sound grossly healthy but DAMNNNNNNN they were so fricken good. I couldn’t even finish them at the end. I was SO full. 10/10 recommend ladies/gents/anything in between.
