Easy Vegan Banana Bread Recipe

Hey, y’all, who else is scared shitless because of this corona madness? Well, same. However, there is no need to fret!! As long as you stay indoors, wash your hands, and keep supporting your immune system, you should be ok. I say should and not will, because, well, shit is getting crazy out there and who knows what’ll happen in the next few weeks. 

Corona-talk aside, for those of you looking to mentally escape the madness, one thing I totes recommend you do is bake. Baking always soothes me and keeps my mind busy (mainly because I’m terrible at it and spend most of my mental energy not trying to burn the kitchen down). 

I know everyone has limited ingredients in quarantine, so I set out to find the most simple vegan banana bread recipes out there. Lo and behold, I found it. Our bae Better Crocker came to the rescue. All you need are baking staples (which you probs already have) and bananas. Especially if you have any uneaten bananas getting wayyyyyy too ripe in your quarantine kitchen, this is the most perfect and tasty way to use them up.

The only changes I made to the recipe were: I used vegan chocolate chips instead of walnuts (for maximum yum factor) and used sugar-free vanilla beverage syrup because I did not have vanilla LOL. 

It was SOOOOO DELICIOUS. Lowkey, best banana bread I’ve ever had. Even my twin was obsessed. 

My only fail in this: the garnish. If you’re gonna put banana slices on top like I did, make sure they are SUPER thin, so they dry out and remain a cute garnish. Mine were thick and remained soggy and I had to eat around them and it was lowkey not lit. Anyway, bone app the teeth!
