Vegan at Very Fresh Noodles in Chelsea Market – New York, NY

I’ve straight up died and gone to heaven. I’m not even kidding. If you know me at all, you know I’m obsessed with three things: Asian food, carbs, and red bean. Those three things make the perfect combination for me to yumgasm. Well, guess what…? It happened. I yumgasmed. 

Chelsea Market in Chelsea, Manhattan (my old hood, whattup!!) is basically a food market in New York that is filled with a variety of different food stands and vendors that are constantly changing. Not all of them are vegan, but most of them have at least a vegan option or two. To my luck, Very Fresh Noodles seems to have recently popped up and has vegan options, so I just knew I had to give it a try. 

What is Very Fresh Noodles? I mean, I feel like the name pretty much tells you, but I’ll elaborate for those in the back. It is a Taiwanese noodle shop that sells the most DELICIOUS homemade al-dente thickkkkk af noodles in a bowl of soup. It’s like ramen… but on crack. 

My sister, my friend Mackenna, and I all got the “Spicy Vegan Noodles with Mock Duck, Bok Choy, and Shitake Mushrooms.” Hands down, it was divine. The noodles were literally cooked to perfection. The broth was delicious and hearty, plus the veggies and mushrooms inside were a great touch. Although the name of the dish implies that the dish is spicy, we specifically asked for ours to be less spicy because I’m a #wimp. It was perfectly not spicy for my white-girl-tastebuds.

Last but not least, the most amazing thing I had at Very Fresh Noodles (yes, even better than the very fresh noodles themselves) was the RED BEAN SOY MILK. I’m crying thinking about it. I literally want to be greeted at the gates of heaven with this beverage. To explain, it’s just sweet, thick soy milk and red bean paste at the bottom. And no, I’m not talking about savory taco red beans for all of those who are about to yuck my yum. Asian red beans are sweet, like caramel and are served as a dessert. It was probably one of the best drinks I’ve ever had.
