Vegan Mac and Cheese Cup Recipe

So what do you get when you put mac and cheese into cupcake tins and bake them…that’s right ladies and gents, you get vegan mac and cheese cups!!!

I recently met a vegan at my school named Jenny and thought it would be a fun idea to invite her over and get creative in the kitchen! Being an avid cheese lover, I thought mac and cheese cups were the way to go! You know I could have done something lame and basic like cupcakes, but I decided to take the road less traveled…and that made all the difference #deep? #orlame? #whatever #overit

The recipe/ingredient list is super, super simple. The pic below is literally all you need to make them (and obvs like a kitchen and stove and stuff, but ya know)

You literally just cook the pasta (I modified the recipe to make it gluten free using gluten free pasta), add in the milk, nutritional yeast, “butter”, salt, and cheese of your choice (I used Daiya Pepper jack shreds to give it a little kick) and then put them in greased cupcake tin and bake at 400 degrees for 20 minutes.
