Simple Vegan Salad (And Dressing!) Recipe

Hey fellas, I am straight stalling from doing a geology project #noshame to come to you here live with a recipe for a simple, yet delicious salad and a homemade healthy peanut butter dressing.

 Remember y’all, simple is sometimes better. Except when it comes to guys. Always aim for 10’s (Aint nobody got time for mediocre boys).

Anyways, I had just been to Whole Foods recently so I had a buncha random shit in my fridge and decided to toss up a salad.

Ingredients for salad:

  • Mixed greens
  • Cherry tomatoes
  • Peppers (green, yellow, and red. Red is da best yo)
  • Avocado
  • Baked teriyaki tofu (they sell it at Whole Foods. The brand is called Wildwood. It’s legit so good, I just eat it plain as a snack sometimes #ThatVeganLifeDoe)
  • Butternut squash (bought the microwavable one at Whole Foods because I’m lazy af)

Ingredients for peanut butter dressing:

  • Powdered peanut butter- PB2 (mixed with water)
  • Rice wine vinegar
  • A little coconut amino (but if ya don’t have any, it’s good without it too)

I legit YOLO’d the dressing just by mixing together random ingredients and it actually turned out to be amazing. Highly recommend. Also, I’m pretty sure I was a master chef in a past life  #nbd

***** P. S. No measurements for dressing, just kinda feel it out. Make the PB first and then add the others (or do whatever you want. I mean, it’s your life….)
