Easy Vegan Dinner Ideas (ala the Cooking club at USC)

So guys…apparently there’s a cooking club at USC (who knew??)! The other day, they decided to hold a vegan cooking class on campus because they are glorious angels sent from heaven and Bella and I went! Can’t say no to free vegan food. Sorry, not how I was raised…

Anyway, as a large team effort we (the cooking club team members, Bella, and additional vegans) made: 

  1. Sweet potato black bean patties (With vegan buns topped w/ lettuce, tomato, onions, sauteed mushrooms, ketchup, mustard, and BBQ sauce)DSC00563 
  2. Fried & baked french fries (Including rosemary seasoned fries and nacho fries topped with corn, beans, and taco seasoning) DSC00555

I’m so sorry I don’t have the recipes. The club was going to email them out and never did? IDK, second semester is totes busy so I totes get it, but again so sorry. I can try my best to explain what we did: 

  1. For the sweat potato patty we basically blended peppers, onions, chives (?), chickpeas, black beans, and sweat potato. They blended that together and turned them into patties. I think they needed more flour because we ended up having to bake them since they wound’t hold together on the pan. Still yummy tho!

2. For the fries we just washed and peeled the potatoes (some we left the skin on them), sliced them and seasoned them. For the baked ones, we put them on a pan w/ oil and baked until crispy. For the fried ones, we put the potato slices (w/out seasoning) into the hot oil, took out when they were brown and crispy and then sprinkled w/ salt and seasoning right after they came out of the oil!

3. Below are the ingredient lists for the two raw desserts… I don’t remember the exact recipes but for the almond butter cups we made the peanut butter “paste”, put that into cute little USC Trojan molds and topped with the raw chocolate mixture, then put in freezer to freeze. For the fudge, we mixed all the ingrediants and then froze and cut up.

Anway, it all kind of looks messy but it was uber fun, uber delicious, and we met some pretty awesome people! Including our new vegan friend Patrice!! FIGHT ON ERRRRYBODY!
